Chocolate Avocado Mousse in glass parfait glasses

This week our talented friend Miriama Smith has shared her delicious chocolate mousse recipe, there’s no eggs in this one, the base is just avocado and coconut cream.

It is so quick and easy to make and sure to be a firm family favourite.

Chocolate Avocado Mousse

2 Avocados

1 400 ml can Coconut cream

1 tsp Vanilla bean essence

1/4 cup Cacao (Vegan) or 1/2 a block dark chocolate

1 tsp Instant coffee (you can leave this out)

Honey or maple syrup to taste

Method

Melt chocolate in a double boiler or in a glass bowl set above a pot of simmering water until just soft.

Scoop out avocados removing the stone, put into blender along with the chocolate, coffee & vanilla start to blend whilst pouring in the coconut milk until smoothy and creamy, you may have some cream left over depending on the thickness. Add honey or syrup to taste and blend again.

Pour or spoon into serving glasses and refrigerate for 20 minutes before serving.

      A regular block of chocolate as per the photograph. Whitakers is very nice. If using cacao you use a block also, if using powder you don’t need to melt it, just add to the coconut milk and then blend with the other ingredients.

      It’s a regular sized 400ml can – but they can be different thicknesses so shake well and add only what you need as blending and once you get the right consistency stop adding it in.
